Simple Baked Meringue with Fruit Jams, Fresh Fruit and Berries, Icing Sugar

What to do with those leftover egg whites sitting in the bottom of your freezer? These Brown Sugar meringues are a sure fire winner and are so simple and easy to make.

Ingredients:

5 egg Whites

2 cups Light Brown Sugar

Jams and jellies of your choice ( I love all types so get creative here)

1 cup of mixed Fresh Berries and Fruit


Directions:

  1. Preheat your oven to 250 degrees F
  2. In your medium sized pot, add water and bring to a simmer over medium high heat
  3. Place egg whites and brown sugar in a stainless steel bowl and place over simmering water.
  4. Whisk slowly together until the brown sugar dissolves, approximately 5 minutes
  5. Make sure the mixture isn't too hot and pour into the stand mixer.
  6. With the whisk attachment, start on low speed and increase to medium high as the meringue begins to form, approximately 5 minutes.
  7. Once whipped to stiff peaks, turn off the mixer and on your parchment lined cookie sheet dollop generously with either, individual portions or one large brown sugar meringue.
  8. Bake in the preheated oven for 1 hour until just set and then turn off the oven.
  9. Allow meringues to dry in the oven overnight.
  10. Remove the following day and eat immediately or! Store in the freezer for up to 2 weeks for a cold and chewy frozen meringue.
  11. Garnish with your jams of choice and fruit and berries with a sprig of mint and a light dusting of icing sugar.
